These not only satisfy a sweet craving, they offer a little nutrition as well. A candy that’s high in vitamin E and minerals.
1 1/2 cups Rapadura evaporated cane juice or brown sugar
1/4 cup water
3 Tbsp thawed, frozen orange juice concentrate
2 cups pecan halves
Combine cane juice, water and orange juice concentrate in a medium saucepan. Bring to boiling stirring constantly.
Boil slowly, without stirring, to 240º on a candy thermometer or to soft-ball stage (a drop of sauce in cold water forms a soft ball).
Remove from heat. Add pecans and stir until syrup looks cloudy. Drop by teaspoons into clusters on well-greased cookie sheet. Cool.
